Oven-Baked French Toast

Ingredients

Blue Ribbon High Fibre Duo bread. 
Four slices of gammon. 
Bacon rashers.
White cheddar cheese.
Mayonnaise
Chopped chives

Method

1.Add the chives to the beaten egg and set aside.
2. Cut the crusts off each slice of bread and then cut in half; you should end up with 2 long fingers of bread.
3. Cut all your other ingredients to match the same shape as the bread; long and thin fingers.
4. Start to assemble by spreading with mayo, add a piece of gammon, a slice of cheese, and finally top with a bread finger to make up a complete thin sandwich.
5. Wrap each finger with a streaky bacon piece and brush with the egg mixture.
6. Place on a prepared baking tray and bake for 10-15 minutes until the cheese is melted and the bacon on top is crispy.
7. Serve immediately.
